Ingredients
- 16 ounces bacon, sliced
- 1 (15.5-ounce) can hominy
- 6 eggs
- 2 tablespoons milk or half-and-half
- 4 green onions, sliced
- 1/2 cup cheddar cheese, shredded
- hot sauce, optional, to taste

Directions
Step 1 –In a large non-stick skillet, cook the bacon over medium-high heat until crispy, about 15 minutes.
Step 2 –Transfer the bacon to a paper-towel-lined plate and let it cool.
Step 3 –When it is cool enough to handle, crumble the bacon.
Step 4 –Drain the hominy and add it to the skillet with the leftover bacon drippings.
Step 5 –Stir and cook the hominy until lightly browned, about 3-5 minutes.
Step 6 –Add in the eggs, the milk, and the green onions and cook, stirring frequently, until the eggs are just about cooked, about 3-5 minutes.
Step 7 –Fold the cheese into the egg mixture until melted.
Step 8 –Crumble the bacon over the top of the egg mixture.
Step 9 –Serve with the hot sauce.
