Ingredients
- 1/4 cup whole-grain coarse mustard
- 2 tablespoons Dijon mustard
- 2 tablespoons yellow mustard
- 1/4 cup plus 2 tablespoons honey
- 2 tablespoons olive oil, divided
- 1 cup yellow onion, chopped
- 1 tablespoon garlic, minced
- 4-5 (8-ounce) chicken breasts, boneless and skinless
- salt, to taste
- freshly ground black pepper, to taste
- 4 small sprigs rosemary
Directions
Step 1 –Preheat the oven to 375 degrees F.
Step 2 –Lightly coat a 9×13-inch baking dish with nonstick cooking spray.
Step 3 –In a large bowl, add the coarse mustard, the Dijon mustard, the yellow mustard, the honey, and 1 tablespoon of the olive oil and whisk to combine.
Step 4 –In a small skillet over medium heat, add the remaining olive oil.
Step 5 –Add the onions to the heated olive oil and sauté until they are golden-brown, about 8 minutes.
Step 6 –Add the garlic to the onions and sauté, about 30 seconds.
Step 7 –Pour the onion-garlic mixture into the bottom of the prepared baking dish.
Step 8 –Season both sides of each of the chicken breasts with the salt and the black pepper.
Step 9 –Place the seasoned chicken breasts on top of the onion-garlic mixture.
Step 10 –Pour the mustard mixture over each of the seasoned chicken breasts so that they are completely covered.
Step 11 –Nestle the sprigs of rosemary between each of the coated chicken breasts.
Step 12 –Bake the chicken breasts until they reach an internal temperature of 165 degrees F, about 25-30 minutes. Tent the dish with aluminum foil near the end of the cooking time to prevent the mustard sauce from burning, as needed.
Step 13 –Serve the chicken breasts, topped with the sauce.
