Ingredients
- 2 cups egg noodles, cooked
- 2 (10.75-ounce) cans cream of mushroom soup
- 1/2 cup chicken broth
- 1/4 cup dry sherry
- 4 cups chicken, cooked and chopped
- 3 cups sharp cheddar cheese, grated, divided
- 1 (2.25-ounce) package toasted slivered almonds
- 1/4 cup pimentos, drained and chopped
- 1 (4-ounce) can sliced mushrooms, drained
- salt, to taste
- pepper, to taste
- parsley, to taste, chopped, for garnish

Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Grease a 13×9-inch casserole dish.
Step 3 –In a large bowl, add the cooked egg noodles, the cream of mushroom soup, the broth, and the sherry and stir to combine.
Step 4 –Add the chicken, 2 cups of the cheese, the almonds, the pimentos, the mushrooms, the salt, and the pepper to the noodle mixture and gently toss to combine.
Step 5 –Add the chicken mixture to the prepared casserole dish.
Step 6 –Top the chicken mixture with the remaining cheese and bake until bubbly, about 30 minutes.
Step 7 –Serve the bake garnished with the parsley.
