Directions
Step 1 –Line an 18×26-inch baking sheet with wax paper.
Step 2 –In a medium bowl, add 1 cup of the mayonnaise, 2 teaspoons of the lemon juice, the Dijon mustard, the smoked paprika, the salt, and the black pepper and stir to combine.
Step 3 –Taste the sauce mixture and adjust with the salt and the black pepper, as needed.
Step 4 –Preheat the grill to medium-high heat and use the vegetable oil to coat the grill grates.
Step 5 –In a large bowl, add the ground chicken, the remaining mayonnaise, the remaining lemon juice, the breadcrumbs, the oregano, the chives, the garlic, the salt, and the black pepper and use your hands to gently mix to combine. Be careful not to over-handle it.
Step 6 –Form the chicken mixture into about 6 average-sized patties or 4 larger patties. Place them in a single layer on the prepared baking sheet.
Step 7 –Create a slight depression in the center of each of the patties so that they cook evenly.
Step 8 –Place the patties on the prepared grill and cook, flipping once, until they reach an internal temperature of 165 degrees F, about 5 minutes on the first side and about 4 minutes on the second side.
Step 9 –Place the cooked patties on a large plate and tent with aluminum foil.
Step 10 –Add the top and bottom halves of hamburger buns, cut-side down, onto the grill and heat until they are toasted, about 30 seconds.
Step 11 –Spread the sauce mixture onto the bottom buns and top with the cooked patties, the butter leaf lettuce, the avocado, the tomato, and the red onion.
Step 12 –Serve.
