Impress the In-laws Roast

Let’s go over the checklist for the holidays! Decorate: check. Find the festive sweaters: check. Wear the festive sweaters: we’ll leave that one as a “maybe.” Impress the In-laws: ooh, now that is a tricky one. Only something like the Impress the In-laws Roast could manage that. This beefy standing rib roast is impossibly rosy and tender and literally brushed with succulent bacon flavor and gorgeous seasonings before being roasted to achieve an impossibly delicious jacket. By roasting on top of the rib bones, this roast stays extra juicy, too. If Impress the In-laws Roast doesn’t impress the in-laws, nothing will!

Ingredients

  • 1 (5-6-pound) standing rib roast, trimmed of excess fat to expose the rib bones
  • 2 1/2 tablespoons whole grain mustard
  • 1 tablespoon bacon grease
  • 1 tablespoon fresh thyme leaves
  • 2 cloves garlic, minced
  • 1 teaspoon sea salt, plus more to taste
  • 1/2 teaspoon cracked black pepper, plus more to taste

Directions

Step 1 –Remove the upper oven rack to make sure there is enough room in the oven.

Step 2 –Preheat the oven to 450 degrees F.

Step 3 –Line a rimmed baking dish with foil or parchment paper and place the standing rib roast on it. Stand the roast with the rib-point up.

Step 4 –Combine the mustard, the bacon grease, the thyme, the garlic, 1 teaspoon of the sea salt, and 1/2 teaspoon of the cracked black pepper in a small bowl, mixing well.

Step 5 –Rub the spice mixture over the surface of the roast.

Step 6 –Insert an oven-safe meat thermometer into the center of the roast, making sure the tip is directly in the middle of the meat and not touching bone.

Step 7 –Roast the meat for 20 minutes, then lower the heat to 350 degrees F.

Step 8 –Roast until the internal temperature reaches 125 degrees F, about 45 minutes-1 hour.

Step 9 –Transfer the meat from the oven and let rest for 15 minutes.

Step 10 –Slice and serve.
