Funnily enough, the In-a-Jiffy Bake might actually be a sandwich. After all, it sandwiches a succulent and melty ham and cheese filling between fluffy, cornbread, that is infused with onion and tangy, spicy mustard. On the other hand, it would be pretty difficult to eat the In-a-Jiffy Bake by hand, so maybe it isn’t a sandwich at all. But no worries, because no matter where it falls, it tastes delicious.

Ingredients
- 2 packages corn muffin mix, plus the ingredients called for on the packages
- 1 small onion, chopped
- 2 tablespoons spicy brown mustard
- 6 slices ham
- 10 ounces sharp cheddar cheese, shredded
- fresh chives, optional, to taste, minced, for garnish

Directions
Step 1 –Preheat the oven to 400 degrees F.
Step 2 –Grease a 9×9-inch casserole dish.
Step 3 –Prepare the corn muffin mixes according to the package directions.
Step 4 –Add the chopped onion and the spicy brown mustard to the corn muffin batter and stir until well-mixed.
Step 5 –Spread 1/2 of the corn muffin batter into the prepared baking dish.
Step 6 –Top the batter layer with the sliced ham and then the shredded cheese.
Step 7 –Top the cheese later with the remaining batter, gently spreading it to cover.
Step 8 –Bake until the cornbread is golden, about 25-30 minutes.
Step 9 –Allow the casserole to cool for 5 minutes.
Step 10 –Garnish with the fresh chives and serve.
