Ingredients
- 1/2 cup honey
- 1/2 cup rice wine vinegar
- 2 tablespoons mayonnaise
- 1 tablespoon spicy mustard
- 1 cup extra-virgin olive oil
- kosher salt, to taste
- freshly ground black pepper, to taste
- 1 (2-pound) head green cabbage, thickly sliced
- 1 small red onion, thinly sliced
- 1 cup Chinese celery or celery leaves, roughly chopped
- whole pickles, such as dill or sweet, to taste, chopped, plus the juices

Directions
Step 1 –In a medium bowl, add the honey, the rice wine vinegar, the mayonnaise, and the mustard and whisk to combine.
Step 2 –Slowly drizzle the olive oil into the honey mixture and whisk to combine.
Step 3 –Add the salt and the black pepper to the honey mixture and whisk to combine.
Step 4 –In a large bowl, add the cabbage, the red onion, the Chinese celery, the pickles, and the dressing mixture and stir well to combine.
Step 5 –Taste the coleslaw and season with the salt and the pepper, as needed. Stir to combine.
Step 6 –Add the pickle juice to the coleslaw, a little at a time, and toss to combine.
Step 7 –Tightly cover the bowl and place in the refrigerator to marinate until ready to serve.
Step 8 –Serve.
