Ingredients
For the sauce:
- 1/4 cup hoisin sauce
- 2 tablespoons less-sodium soy sauce
- 2 tablespoons lime juice
- 1 tablespoon jarred chili-garlic sauce
- 1 tablespoon fresh mint, finely chopped
- 1 teaspoon ground ginger
- 1 clove garlic, minced
For the lettuce wraps:
- 1 tablespoon coconut or avocado oil
- 1 pound ground chicken, turkey, or pork
- 1 (8-ounce) can water chestnuts, drained and diced
- 1 large head Boston or butter lettuce, leaves separated
- maifun rice sticks, to taste, for garnish
- 4 scallions, sliced, for garnish
Directions
Step 1 –In a small bowl, add the hoisin, the soy sauce, the lime juice, the chili-garlic sauce, the chopped mint, the ginger, and the garlic and whisk to combine. Set it aside.
Step 2 –In a large skillet over medium-high heat, add the coconut oil.
Step 3 –Add the ground chicken to the heated oil and cook, while crumbling, about 3-5 minutes.
Step 4 –Add the water chestnuts and the sauce mixture to the ground chicken and cook, stirring frequently, until the meat is no longer pink and is cooked through, about 2-3 minutes.
Step 5 –Spoon the chicken mixture evenly into each of the lettuce leaves.
Step 6 –Serve the wraps garnished with the rice sticks and the scallions.
