Irish Cheddar Grilled Cheese

Gold and green are the colors of this Irish Cheddar Grilled Cheese, so you can see at a glance the delicious flavors on display. The outside is golden, buttered toast, while the inside features emerald, sour pickles, melty, golden sharp Irish cheddar, and bands of floral green herbs! There’s even aromatic herb-butter on the inside of Irish Cheddar Grilled Cheese for a combination of gold and green you just can’t beat! You’ll never go back to regular grilled cheese after this!

Ingredients

  • 4 tablespoons butter, softened, plus more, to taste
  • 2 tablespoons parsley, chopped, plus more, optional, to taste
  • 2 tablespoons scallions, chopped, plus more, optional, to taste
  • 2 tablespoons chives, chopped, plus more, optional, to taste
  • 8 slices white bread
  • 4 slices Irish cheddar cheese
  • 12 slices bread-and-butter pickles

Directions

Step 1 –In a bowl, add 4 tablespoons of the butter, 2 tablespoons of the parsley, 2 tablespoons of the scallions, and 2 tablespoons of the chives and mash to combine.

Step 2 –Spread 1/2 of the herb-butter mixture on 4 slices of the bread.

Step 3 –Add 1 slice of the Irish cheddar cheese and 3 slices of the pickles to the buttered-side of each of the bread slices.

Step 4 –Cover the cheese and the pickles with the remaining bread slices, closing the sandwiches.

Step 5 –Spread the extra plain butter on the outsides of the sandwiches.

Step 6 –Preheat a large skillet over medium heat.

Step 7 –Place the sandwiches in the skillet and fry until golden, about 3-4 minutes per side.

Step 8 –Spread the remaining herb-butter mixture on the hot sandwiches.

Step 9 –Slice the sandwiches into quarters.

Step 10 –Press the cut-sides of the sandwiches in the extra parsley, the extra scallions, and the extra chives.

Step 11 –Serve.
