Ingredients
- 1 pound of chicken breasts, boneless, skinless, and cut into large cubes
- kosher salt, to taste
- freshly ground black pepper, to taste
- 2 tablespoons tomato paste
- 1/4 cup extra-virgin olive oil, plus more for drizzling
- 3 cloves garlic, minced
- 1 tablespoon fresh Italian parsley, chopped, plus more leaves for garnish
- 1 baguette of French bread, cut into cubes
Directions
Step 1 –Soak eight wooden skewers in water for 20 minutes.
Step 2 –Season the chicken with salt and pepper.
Step 3 –Combine the tomato paste, olive oil, garlic cloves, and chopped parsley in a large bowl.
Step 4 –Add the chicken and toss it to fully coat.
Step 5 –Refrigerate the chicken and marinate for 30 minutes.
Step 6 –Preheat the grill to medium-high heat.
Step 7 –Skewer the chicken and bread, alternating between the two.
Step 8 –Drizzle the chicken and bread with olive oil.
Step 9 –Season the chicken and bread with salt and pepper.
Step 10 –Grill the skewers, turning occasionally, until the chicken is cooked through at 165 degrees F and the bread is slightly charred, for about 10 minutes.
Step 11 –Garnish with parsley.
Step 12 –Serve.
