Juicy Roasted Chicken

Ingredients

  • 1 (3 pound) whole chicken, giblets removed
  • salt, to taste
  • black pepper, to taste
  • 1 tablespoon onion powder, or to taste
  • 1/2 cup margarine, divided
  • 1 stalk celery, leaves removed and chopped into 3-4 pieces each.

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Put the chicken into a roasting pan, and then season it generously both inside and outside with salt and pepper.

Step 3 –Lightly sprinkle the chicken with the onion powder.

Step 4 –Put about 3 tablespoons of the margarine on the inside of the chicken.

Step 5 –Arrange dollops of the rest of the margarine across the chicken, including under the skin.

Step 6 –Put the celery into the chicken.

Step 7 –Bake the chicken, uncovered, for about an hour and 15 minutes in the oven, to a minimum temperature of 165 degrees F at its thickest part.

Step 8 –Remove the chicken from the oven and baste it with the melted margarine at the bottom of the roasting pan.

Step 9 –Cover the chicken with foil, and let it rest for about 30 minutes before serving.

Step 10 –Serve warm.
