Ingredients
- 18-20 whole-grain salted crackers, pulsed in a food processor until fine
- 2 1/2 cups corn cereal flakes, pulsed in a food processor to fine crumbs
- 2 tablespoons sesame seeds
- 3/4 teaspoon cayenne pepper
- 1/2 teaspoon garlic powder
- 2 egg whites
- 1 cup low-fat plain yogurt
- 1 tablespoon Dijon mustard
- 1/2 teaspoon salt
- 4 medium chicken breasts, skinless and boneless, rinsed and patted dry
- 4 chicken thighs, skinless and boneless, rinsed and patted dry
Directions
Step 1 –Preheat the oven to 375 degrees F.
Step 2 –Lightly spray a baking sheet with olive oil.
Step 3 –Combine the cracker crumbs, the corn cereal crumbs, the sesame seeds, the cayenne, and the garlic powder in a shallow bowl.
Step 4 –In a large bowl, combine the egg whites, the yogurt, the Dijon mustard, and the salt.
Step 5 –Add the chicken breasts and the chicken thighs to the yogurt mixture, tossing to coat.
Step 6 –One at a time, dip the chicken pieces into the cracker mixture, packing the crumbs onto the chicken.
Step 7 –Arrange the coated chicken pieces on the prepared baking sheet.
Step 8 –Spray the chicken with cooking spray.
Step 9 –Bake the chicken until the juices run clear and the chicken is cooked internally to 165 degrees F, about 45-50 minutes.
Step 10 –Serve.
