Her story is truly fascinating, which is what inspired us to create this Kate Middleton Kale Salad. Now, we knew we couldn’t just choose any old salad to represent her. It needed to be something that was filled with class and grace, just like the effortlessly beautiful and timeless gal herself. So, if you’re in the mood to feel a little bit elegant, then this little plate of fresh kale tossed in a rich, creamy, homemade dressing, topped with a couple crunchy croutons is for you. Captivate your tastebuds in the most royal of ways with the Kate Middleton Kale Salad!

Ingredients
- 1/2 medium clove garlic, peeled and minced
- 1/4 teaspoon kosher salt
- 3 tablespoons olive oil
- 3 tablespoons lemon juice plus zest of 1 lemon, for serving
- 1/8 teaspoon red pepper flakes
- ground black pepper, to taste
- 1/4 cup parmesan cheese, freshly grated, plus more, to taste, for serving
- 1 large bunch Tuscan kale, washed and dried, destemmed, chopped
- croutons, optional, to taste, for serving

Directions
Step 1 –Sprinkle the minced garlic with the salt.
Step 2 –Carefully hold the blunt edge of a knife and scrape the sharp edge of the blade over the minced garlic, holding the knife at an angle, to mash the garlic into a paste.
Step 3 –Place the garlic paste in a medium bowl.
Step 4 –Add the olive oil, the lemon juice, the red pepper flakes, and the ground black pepper to the garlic paste and whisk to combine.
Step 5 –Add 1/4 cup of the cheese to the garlic mixture and stir to combine.
Step 6 –Toss the kale with the dressing.
Step 7 –Serve the salad topped with the lemon zest, the extra parmesan cheese, and the croutons.
