Killer Breakfast Wrap

It’s not just a good breakfast; it’s a real killer! Killer Breakfast Wrap is a jam-packed breakfast sandwich with all the fixings you could possibly imagine; succulent, crispy bacon, fluffy eggs, creamy avocado, and melty cheese! All of that in a golden, butter-fried tortilla? Now that is how you wake up in style! Killer Breakfast Wrap is quick, delicious, and packed full of protein to get you started on the right foot. As the kids might say, it slays!

Ingredients

  • 1 large egg
  • salt, to taste
  • pepper, to taste
  • 2 teaspoons unsalted butter, divided
  • 1/2 avocado, halved and seeded
  • 1 (10-inch or burrito-size) tortilla
  • 1 1/2 strips bacon, cooked, cut into 3 half strips
  • 1/4 cup mozzarella cheese or Mexican cheese blend, shredded

Directions

Step 1 –In a bowl, add the egg, the salt, and the pepper and beat to combine.

Step 2 –In a nonstick skillet over medium heat, melt 1 teaspoon of the butter.

Step 3 –Add the egg mixture to the melted butter and cook until just cooked through, about 3 minutes.

Step 4 –In a bowl, add the avocado, the salt, and the pepper and mash to combine.

Step 5 –Cut a slit into the side of the tortilla that’s closest to you, cutting just up to the center.

Step 6 –In each of the four quadrants, add the eggs, the bacon, the avocado, and the cheese.

Step 7 –Fold the tortilla so the four quadrants are stacked on each other and the tortilla is shaped like a triangle.

Step 8 –In the same skillet over medium heat, melt the remaining butter.

Step 9 –Add the folded tortilla and cook until golden-brown and crispy on both sides, about 2-3 minutes per side.

Step 10 –Serve hot.
