- 2 cups fresh baby spinach
Directions
Step 1 –In a large skillet over medium heat, heat the butter and 1 tablespoon of the olive oil.
Step 2 –Season the chicken halves all over with 1/2 teaspoon of the salt, 1/4 teaspoon of the pepper, and the garlic powder.

Step 4 –Transfer the chicken halves to a cutting board to cool.
Step 5 –In the same skillet, add the remaining oil and the mushrooms and sauté, stirring occasionally, until they are lightly golden and the excess liquid has evaporated.

Step 7 –Stir the heavy cream into the sauce, then sprinkle with the parmesan cheese.
Step 8 –Bring the sauce to a light boil while stirring frequently.
Step 9 –Reduce the heat, then simmer the sauce until it slightly thickens, about 2 minutes.
Step 10 –Season the sauce with the extra salt as needed.
Step 11 –Add the spinach to the sauce and stir until it has just wilted.
Step 12 –Add the chicken halves to the skillet and spoon the sauce over them.
Step 13 –Serve the chicken garnished with the extra green onions.
