Ingredients
For the homemade whipped cream:
- 2/3 cup heavy cream, very cold
- 1 tablespoon granulated sugar
- 1/2 teaspoon almond or vanilla extract
For the strawberry sauce:
- 2 cups strawberries, hulled and sliced
- 1 tablespoon all-purpose flour
- 3 tablespoons butter
- 1/3 cup granulated sugar
For the French toast:
- 2 large eggs
- 1/2 cup milk
- 1/2 teaspoon almond or vanilla extract
- 1 tablespoon all-purpose flour
- 1 tablespoon butter, plus more, to taste
- 8 slices brioche toast or a thick-cut white bread
Directions
Step 1 –In a medium, chilled glass bowl, add the heavy cream, 1 tablespoon of the sugar, and 1/2 teaspoon of the almond extract and whip until stiff peaks form.
Step 2 –Refrigerate the whipped cream until ready to use.
Step 3 –In a bowl, add the strawberries and 1 tablespoon of the flour and toss to combine.
Step 4 –In a medium saucepan over medium heat, add 3 tablespoons of the butter, the strawberry mixture, and the remaining sugar and stir to combine.
Step 5 –Once the butter is melted, reduce the heat to low.
Step 6 –Simmer the strawberry mixture, stirring occasionally, until the sauce darkens and thickens slightly, about 6-8 minutes.
Step 7 –Transfer the strawberry sauce from the heat.
Step 8 –In a wide, shallow dish, add the eggs, the milk, the remaining almond extract, and the remaining flour and whisk until the flour is fully incorporated, about 2-3 minutes.
Step 9 –Preheat a large, wide skillet or griddle over medium-low heat.
Step 10 –Add 1 tablespoon of the butter to the skillet and let it melt.
Step 11 –Dip 1 slice of the bread in the egg mixture, allowing it to soak for a few seconds.
Step 12 –Flip the bread slice and let it soak again for a few seconds.
Step 13 –Lift the bread, allowing the excess to drip, then transfer it to the melted butter in the skillet.
Step 14 –Cook the bread until golden-brown on both sides, about 3-4 minutes per side.
Step 15 –Transfer the cooked French toast to a plate.
Step 16 –Repeat with the remaining bread slices and the remaining extra butter until all of the French toast is cooked. You can cook multiple slices simultaneously, as long as there is enough room in the skillet for them to not touch.
Step 17 –Serve the French toast topped with the whipped cream and the strawberry sauce.
