Ingredients
- 6 tablespoons butter, melted, divided, plus more, softened, for greasing a baking dish
- 2 pounds fresh or frozen spinach, washed and drained
- 6 tablespoons parmesan cheese
- 6 heaping tablespoons onions, minced
- 6 tablespoons light cream or half-and-half
- salt, to taste
- fresh ground pepper, to taste
- 1/2 cup crackers, crushed
Directions
Step 1 –Preheat the oven to 375 degrees F.
Step 2 –Grease a shallow 1 1/2-quart baking dish with softened butter.
Step 3 –Heat a skillet over medium-high heat and cook the spinach until it is wilted.
Step 4 –Coarsely chop the cooked spinach.
Step 5 –In a large bowl, combine the spinach, the cheese, the onions, the cream, 4 tablespoons of the melted butter, the salt, and the pepper.
Step 6 –Place the spinach mixture into the prepared baking dish.
Step 7 –In a medium bowl, mix the cracker crumbs with the remaining melted butter, and then sprinkle it over the casserole.
Step 8 –Bake the casserole until it is golden and lightly crusted, about 20-30 minutes.
Step 9 –Serve.
