The layers of a casserole and the flavors of a taco come together to create something more than the sum of its parts… and its parts were already pretty amazing! Layered Tortilla Pie is stacked with favorites like juicy, savory taco meat, tortillas, creamy cheese sauce, and a melty topping of even more cheese (because you can never have enough cheese). Layered Tortilla Pie comes together in half an hour or less, so it has the heartiness of a casserole and the speed of a plate of high-quality nachos. This is lavishness in layered form!
Ingredients
- 1/2 pound lean ground beef, 90% lean
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1 (14.5-ounce) can of Mexican diced tomatoes, drained
- 3/4 cup reduced-fat ricotta cheese
- 1/4 cup part-skim mozzarella cheese, shredded
- 3 tablespoons fresh cilantro, minced and divided
- 4 (8-inch) whole-wheat tortillas
- 1/2 cup cheddar cheese, shredded
Directions
Step 1 –Preheat the oven to 400 degrees F.
Step 2 –Coat a 9-inch round baking pan with cooking spray.
Step 3 –In a large skillet, cook and crumble the beef, onion, and garlic over medium heat until the meat is no longer pink, about 4-6 minutes.
Step 4 –Stir in the chili powder, cumin, and tomatoes.
Step 5 –Bring the mixture to a boil.
Step 6 –Transfer the skillet from the heat.
Step 7 –In a small bowl, mix the ricotta, mozzarella, and 2 tablespoons of cilantro.
Step 8 –Place 1 tortilla in the prepared baking pan.
Step 9 –Layer, in this order, 1/2 of the meat sauce mixture, 1 tortilla, the ricotta mixture, 1 tortilla, and the remaining meat sauce.
Step 10 –Top with the remaining tortilla.
Step 11 –Sprinkle the top with the cheddar cheese and remaining cilantro.
Step 12 –Bake covered until heated through, about 15-20 minutes.
Step 13 –Serve.
