Leftover Cobb is a light and breezy way to make a new, refreshing lunch or dinner from last night’s dinner. Crisp romaine lettuce, diced savory ham, juicy cherry tomatoes, ripe avocados, some hearty hard-boiled eggs, and tangy goat cheese are topped with a delicious yogurt-ranch dressing for the best re-creation you will ever find. Ingredients
For the Greek yogurt ranch:
- 1/3 cup Greek yogurt
- 1/4 cup buttermilk
- 1/4 teaspoon dill
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- kosher salt, to taste
- freshly ground black pepper, to taste
For the salad:
- 5 cups romaine lettuce, chopped
- 1 cup ham, cooked and diced
- 1/2 cup cherry tomatoes, halved
- 1 avocado, diced
- 2 hard-boiled eggs, diced
- 1/4 cup goat cheese, crumbled
Directions
Step 1 –In a small bowl, add the Greek yogurt, the buttermilk, the dill, the garlic powder, and the onion powder and whisk to combine.
Step 2 –Season the dressing with the salt and the black pepper.
Step 3 –In a large bowl, add the lettuce.
Step 4 –Top the lettuce with arranged rows of the ham, the tomatoes, the avocado, the eggs, and the goat cheese.
Step 5 –Serve immediately with the Greek yogurt ranch and more of the black pepper.
