Ingredients

  • 8 cups lower-sodium chicken broth
  • 4 cups turkey, cooked and shredded
  • 1 cup sweet onion, chopped
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 tablespoon garlic, minced
  • 1 tablespoon dried thyme
  • 1/4 cup water
  • 1/4 cup cornstarch
  • 3/4 teaspoon kosher salt
  • 1 1/2 cups self-rising flour
  • 1/4 teaspoon black pepper
  • 3/4 cup buttermilk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • fresh flat-leaf parsley, optional, to taste, chopped, for garnish

Directions

Step 1 –Add the chicken broth, the cooked turkey, the onion, the carrots, the celery, the garlic, and the dried thyme in a 6-quart slow cooker.

Step 2 –Cover and cook on low until the turkey and the vegetables are tender, about 6-7 hours.

Step 3 –Whisk together the water, the cornstarch, and the kosher salt in a small bowl.

Step 4 –Stir the cornstarch mixture into the turkey mixture.

Step 5 –Cover the slow cooker and cook on high until the mixture begins to simmer, about 10 minutes.

Step 6 –In a medium bowl, add the self-rising flour and the black pepper and whisk to combine.

Step 7 –In a small bowl, add the buttermilk and the egg and whisk to combine.

Step 8 –Add the buttermilk mixture to the flour mixture and mix until just combined.

Step 9 –Add the melted butter into the batter and stir until just combined.

Step 10 –Drop heaping tablespoonfuls of the batter into the simmering soup.

Step 11 –Cover and cook on high until a wooden pick inserted into center of the dumplings comes out clean, about 20-25 minutes.

Step 12 –Serve garnished with the parsley.
