Going out for brunch can be a hassle, but with Lemon Berry French Toast, you can enjoy a delicious, restaurant-worthy breakfast without the high prices and long lines. This baked blueberry and lemon cinnamon-y goodness is loaded with the freshest and juiciest berries, a nice touch of lemony zest, and a custard-y, cinnamon-spiced base… which sounds pretty luxurious, huh?! Plus, it’s incredibly easy to make, so you can whip it up in the comfort of your own home, while still enjoying all the fancy flavors your favorite brunch spot has to offer. Go ahead and treat yourself to Lemon Berry French Toast… you deserve it!
Ingredients
For the bake:
- 1 (12-count) package Hawaiian rolls, cubed
- 1 cup blueberries
- 1 1/2 cups milk
- 3 large eggs
- 2 tablespoons maple syrup, plus more to taste
- zest of 1 lemon
- 1 1/2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
For the crumb topping:
- 1/4 cup all-purpose flour
- 1/4 cup brown sugar, packed
- 1/2 teaspoon ground cinnamon
- 1/4 cup unsalted butter, cut into cubes
- 2 tablespoons confectioners’ sugar
Directions
Step 1 –Lightly coat a 9×13-inch baking dish with nonstick spray.
Step 2 –Place 1/4 of the bread cubes in an even layer in the prepared baking dish.
Step 3 –Top the bread cubes with 1/3 of the blueberries in an even layer. Repeat the layers twice. Starting and ending with a layer of the bread cubes.
Step 4 –In a large bowl, whisk the milk, the eggs, the maple syrup, the lemon zest, the vanilla, 1 1/2 teaspoon of the cinnamon, and the nutmeg together.
Step 5 –Pour the milk mixture evenly over the bread cubes, cover, and chill in the refrigerator for at least 2 hours and up to overnight.
Step 6 –Preheat oven to 350 degrees F.
Step 7 –Combine the flour, the sugar, and the remaining cinnamon in a small bowl.
Step 8 –Add the cubed butter to the flour mixture and use your fingers to toss to coat and work the butter into the dry ingredients until it resembles coarse crumbs.
Step 9 –Evenly sprinkle the crumb topping over the French toast mixture.
Step 10 –Bake the French toast mixture until golden-brown, about for 35-45 minutes.
Step 11 –Sprinkle the French toast with the confectioners’ sugar and serve.
