  • 1 pound chicken drummies (the uppermost part of the chicken wing)
  • 1/4 cup lemon juice, freshly squeezed
  • all-purpose seasoning, to taste
  • 2 tablespoons vegetable oil
  • 1 tablespoon butter
  • 1 medium lemon, zested
  • ground black pepper, to taste

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Clean and pat the chicken drummies dry with paper towels and place them in a bowl.

Step 3 –Pour the lemon juice evenly over the drummies and season them with the all-purpose seasoning, tossing until well-combined.

Step 4 –Heat the vegetable oil in a cast-iron skillet over medium-high heat.

Step 5 –Add the drummies to the hot oil and cook, turning occasionally, until the chicken reaches an internal temperature of 165 degrees F, about 5-10 minutes.

Step 6 –Transfer the drummies from the skillet and into a clean bowl.

Step 7 –In a microwave-safe container, melt the butter in the microwave.

Step 8 –Mix most of the lemon zest, reserving a small amount for garnish, and the black pepper into the butter until well-combined.

Step 9 –Pour the butter mixture over the chicken drummies and mix well.

Step 10 –Spread the chicken out onto a non-stick baking sheet.

Step 11 –Bake the chicken in the preheated oven until the skin is crisp, about 5 minutes.

Step 12 –Transfer the chicken from the oven and sprinkle with the reserved lemon zest and the black pepper.
