Ingredients

  • 1 1/4 cups heavy cream
  • 1/2 cup caster sugar (also called superfine sugar, baker’s sugar, or bar sugar)
  • 1 lemon, juiced
  • berries of choice, optional, to taste, for garnish
  • candied lemon peel, optional, to taste, for garnish

Directions

Step 1 –Place the heavy cream, the sugar, and the lemon juice in a large saucepan and bring to a boil.

Step 2 –Lower the heat and simmer the lemon mixture, while stirring with a spatula and scraping the sides and the bottom of the pan, for 3 minutes.

Step 3 –Allow the mixture to cool until you can comfortably touch the side of the pan.

Step 4 –Pour the mixture into individual ramekins, dishes, wine glasses, or similar serving vessels. The dessert is very rich, so a smaller container will work.

Step 5 –Chill the lemon posset for at least 3 hours and up to overnight.

Step 6 –Serve topped with the berries and the lemon peel.
