Ingredients
For the rice:
- 1 1/2 cups long-grain white rice
- 2 cups chicken stock
- 1 1/2 tablespoons light soy sauce
- 1 tablespoon Chinese cooking wine
- 2 cloves garlic, minced
- 2 cups frozen diced vegetables
- 1/4 teaspoon white pepper
- 1 1/4 cups bacon, chopped
For the topping:
- 1 tablespoon sesame oil
- 1/2 cup green onion, finely sliced
Directions
Step 1 –Preheat the oven to 390 degrees F.
Step 2 –Place the white rice, the chicken stock, the soy sauce, the Chinese cooking wine, the garlic, the frozen vegetables, and the white pepper in a 9×13-inch baking dish and stir, spreading the rice evenly throughout the pan.
Step 3 –Scatter the bacon on top of the rice mixture.
Step 4 –Cover the baking dish with foil and bake for 40 minutes.
Step 5 –Remove the foil and bake until the bacon has darkened in color, the liquid is absorbed, and the rice is cooked but still appears wet.
Step 6 –Transfer the baking dish from the oven and let it rest loosely covered with foil for 10 minutes.
Step 7 –Add the sliced green onions and the sesame oil over top.
Step 8 –Fluff the rice and serve!
