Litter Casserole may sound scary, but it’s actually scary delicious. The “litter”, or fluffy rice, is sprinkled with pieces of succulent meat mixed with creamy cheddar cheese and biscuit mix, giving them the perfect texture. Litter Casserole is more than meets the eye; use it to give your guests a little fright and then make up for it with its yumminess!
Ingredients
- 1 cup biscuit baking mix
- 1 cup cheddar cheese, shredded
- 1 pound ground beef
- 2 cups long-grain rice
- 3 3/4 cups water
- 2 teaspoons salt
- 2 tablespoons butter
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –In a large bowl, use clean hands to mix the biscuit baking mix, the cheddar cheese, and the beef together.
Step 3 –Mold the mixture into various sized and shaped pieces.
Step 4 –Place the molded meat pieces in an ungreased baking pan, ensuring they are not touching each other.
Step 5 –Bake the meat pieces until they are all golden-brown, firm, and slightly crusty, about 20 minutes.
Step 6 –While the meat is baking, in a large saucepan over high heat, add the rice, the water, the salt, and the butter and bring to a boil.
Step 7 –Stir the rice mixture and lower the heat to low, simmering with the lid on until the rice has absorbed the liquid, about 15 minutes.
Step 8 –Transfer the saucepan from the heat and carefully lift off the lid.
Step 9 –Use a fork to fluff the rice and set it aside.
Step 10 –Transfer the cooked meat pieces onto paper-towel-lined plates to drain.
Step 11 –Spoon the cooked rice and the meat pieces into the same baking dish, leaving some of the meat pieces uncovered.
Step 12 –Serve.
