Ingredients

  • 1 cup chicken stock
  • 4 cloves garlic, minced
  • 1 large head cauliflower, cleaned and trimmed
  • 1/2 cup sour cream
  • 4 ounces cream cheese
  • 1 1/4 cups sharp cheddar cheese, shredded and divided
  • 8 strips bacon, cooked crisp, crumbled, and divided
  • 4 green onions, thinly sliced and divided
  • sea salt, to taste
  • black pepper, to taste

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –In a large pot, add the chicken stock and the garlic.

Step 3 –Add the whole head of the cauliflower to the pot, cover, and steam over medium-high heat until the cauliflower is fork tender and soft enough to mash, about 15 minutes.

Step 4 –Drain the chicken stock from the pot and let the steamed cauliflower sit in the hot pot to help dry out the excess moisture.

Step 5 –Mash the cauliflower with the cream cheese and the sour cream until well mashed together.

Step 6 –Mix 1/2 of the cheese, 1/2 of the bacon, 1/2 of the green onions, the salt, and the pepper into the mashed cauliflower mixture.

Step 7 –Transfer the cauliflower mixture to a 9×13-inch casserole dish and top with the remaining cheese and the remaining bacon.

Step 8 –Bake, uncovered, until heated through and the cheese has melted, about 15-20 minutes.

Step 9 –Garnish with the remaining green onions.

Step 10 –Serve.
