Ingredients

  • 3 cups riced cauliflower, thawed
  • 2 tablespoons butter, melted
  • 2 cloves garlic, minced
  • 2 tablespoons dried chives
  • 1 cup sour cream
  • 3 cups cheddar cheese, shredded, divided
  • 1 pound bacon, cooked and crumbled, divided
  • kosher salt, to taste
  • black pepper, to taste

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Lightly grease a 9-inch square baking dish.

Step 3 –In a large bowl, add the cauliflower, the butter, the garlic, the chives, the sour cream, 2 cups of the cheese, and all but 1/4 cup of the crumbled bacon and stir to combine.

Step 4 –Taste the cauliflower mixture and season with the kosher salt and the black pepper.

Step 5 –Transfer the cauliflower mixture to the prepared baking dish.

Step 6 –Top the seasoned cauliflower mixture with the remaining cheese and the remaining bacon.

Step 7 –Bake the casserole, uncovered, until the cheese has melted and is bubbly, about 20 minutes.
