Ingredients

  • 1 1/2 pounds chicken breasts, boneless and skinless, cut into 1/2-inch pieces
  • 1 (16-ounce) package andouille sausage, cut into 1/4-inch pieces
  • 1 red bell pepper, chopped
  • 1 cup onion, chopped
  • 1 (15-ounce) package ricotta cheese
  • 1 large egg
  • 1 tablespoon dried basil
  • 2 (15-ounce) jars Alfredo sauce
  • 2 1/2 cups parmesan cheese, grated, divided
  • 8 lasagna noodles, cooked to al dente, according to the package directions
  • 1 (6-ounce) bag baby spinach, stemmed
  • 8 ounces mozzarella cheese, shredded

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Coat a 9×13–inch baking dish with nonstick cooking spray.

Step 3 –In a large skillet over medium-high heat, add the chicken, the sausage, the bell pepper, and the onion and cook until the meat is cooked through and the vegetables are softened, about 5-7 minutes.

Step 4 –Drain the excess fat from the skillet.

Step 5 –In a small bowl, combine the ricotta, the egg, and the basil.

Step 6 –Add the Alfredo sauce and 2 cups of the parmesan into the skillet with the meat-vegetable mixture and mix until well-combined.

Step 7 –In the bottom of the prepared baking dish, place 4 of the cooked lasagna noodles.

Step 8 –Spread 1/2 of the ricotta mixture over the noodle layer.

Step 9 –Top the ricotta layer with 1/2 of the meat-vegetable mixture, 1/2 of the spinach, and 1/2 of the mozzarella cheese.

Step 10 –Repeat the layers, starting with the noodles.

Step 11 –Bake the lasagna until cooked through and bubbly, about 45 minutes.

Step 12 –Sprinkle the lasagna with the remaining parmesan cheese.

Step 13 –Let the lasagna stand before serving, about 10 minutes.

Step 14 –Serve.
