Ingredients

For the bake:

  • 1 pound lean ground beef
  • 1/2 yellow or sweet onion, chopped
  • 1 jalapeño, seeded and finely chopped
  • 1 (4.5-ounce) can green chiles
  • 1 (1-ounce) packet taco seasoning
  • 1/4 cup plus 1/3 cup water, divided
  • 1/2 cup sour cream
  • 1/3 cup mayonnaise
  • 2/3 cup cheddar cheese, shredded
  • 1 1/4 cups biscuit mix
  • 1 medium tomato, diced
  • paprika, optional, to taste

Optional toppings:

  • avocado, to taste, sliced
  • lettuce, to taste, shredded
  • jalapeño, to taste, sliced

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Coat an 8×8-inch pan with cooking spray.

Step 3 –In a large nonstick pan, cook the beef, while crumbling, until it is no longer pink.

Step 4 –Add the onion and 1 of the chopped jalapeños to the beef and cook until soft.

Step 5 –Add the green chiles and their juices, the taco seasoning, and 1/4 cup of the water to the beef mixture and cook about 1 minute. Then, transfer the skillet from the heat.

Step 6 –In a medium bowl, stir the sour cream, the mayonnaise, and the cheddar cheese together. Set it aside.

Step 7 –In another medium bowl, combine the biscuit mix and the remaining water and stir until a soft dough forms.

Step 8 –Add the dough to the prepared pan and pat it down, spreading it out so that it covers the bottom and extends up the sides a little.

Step 9 –Pour the beef mixture over the dough, then top with the tomatoes and the sour cream mixture. Sprinkle with the paprika.

Step 10 –Bake the taco bake until the dough is golden and the filling is heated through, about 25-30 minutes.

Step 11 –Cut the bake into squares.

Step 12 –Serve the bake topped with the sliced avocado, the shredded lettuce, and the sliced jalapeños.
