Sharing burritos around a table is one of our (made-up) love languages. It does wonders for our souls. But when we can eat the things we enjoy and our bodies feel good about it, too, well, that’s even better. These Low-Fat Black Bean Burritos are basically our soul mates! They’re meat-free, which helps them remain lower in fat, but don’t you worry… they’re loaded with hearty black beans, tangy onions, salty cheese, juicy tomatoes, and crispy lettuce for bite after bite of wholesome and delicious satisfaction! Make sure you serve them with some toppings like tomato-y salsa, creamy sour cream, fresh cilantro, or alluring avocado to really get the flavors talkin’. Ah, we just love it when it’s Low-Fat Black Bean Burritos night! We wish it could be every night… and hey, maybe we’ll make that happen!
Ingredients
For the burritos:
- 1 tablespoon canola oil
- 3 tablespoons onion, chopped
- 3 tablespoons green pepper, chopped
- 1 (15-ounce) can black beans, rinsed and drained
- 4 (8-inch) flour tortillas, warmed
- 1 cup Mexican cheese blend, shredded
- 1 medium tomato, chopped
- 1 cup lettuce, shredded
Optional toppings:
- salsa, to taste
- sour cream, to taste
- fresh cilantro leaves, to taste
- avocado, to taste, sliced
Directions
Step 1 –Heat the oil in a nonstick skillet over medium heat.
Step 2 –Add the onion and the green pepper to the oil and sauté until tender.
Step 3 –Add the black beans to the onion mixture, stir to combine, and cook until the bean mixture is heated through.
Step 4 –Spoon 1/2 cup of the bean mixture, off-centered, onto each of the tortillas.
Step 5 –Sprinkle the bean mixture with the shredded cheese, the tomato, and the lettuce.
Step 6 –Fold the sides and then the ends of the tortillas over the bean mixture and roll them up.
Step 7 –Serve the burritos with the salsa, the sour cream, the cilantro, and the avocado.
