Ingredients
- 2 1/2 cups dried bean blend
- 2 cups ham, diced
- 1 (28-ounce) can crushed tomatoes
- 2 1/2 cups chicken broth
- 1/2 medium sweet onion, diced
- 1/2 cup fresh Italian parsley, chopped
- 1 heaping tablespoon Dijon mustard
- 8 cups water
- 2 tablespoons sun-dried tomatoes
- sea salt, to taste
- black pepper, to taste
- 2 tablespoons Italian salad dressing
Directions
Step 1 –Preheat the oven to 300 degrees F.
Step 2 –In a large Dutch oven or oven-safe pot with a lid, add the dried beans, the diced ham, the crushed tomatoes, the chicken broth, the onions, the Italian parsley, the Dijon mustard, the water, the sun-dried tomatoes, the sea salt, the black pepper, and the Italian salad dressing and stir to combine.
Step 3 –Cover the Dutch oven and bake the soup mixture for 5 hours, without opening the oven door or removing the lid.
Step 4 –Taste the soup and adjust the seasoning as needed.
