Ingredients

  • 1-pound salmon, skin-on and deboned, patted dry
  • 2 teaspoons kosher salt, divided
  • 1 teaspoon black pepper, divided
  • 3 tablespoons olive oil, divided
  • 4 cups romaine lettuce, chopped
  • 3 Persian cucumbers, sliced
  • 2 cups cherry tomatoes, halved
  • 1 (14.5-ounce) can artichoke hearts, drained and halved
  • 1/2 cup pitted Kalamata olives
  • 2 ounces feta cheese, crumbled
  • 1 tablespoon fresh lemon juice

Directions

Step 1 –Season the salmon with 1 teaspoon of the kosher salt and 1/2 teaspoon of the black pepper.

Step 2 –In a large skillet over medium-high heat, add 1 tablespoon of the olive oil.

Step 3 –Reduce the heat to medium. Add the seasoned salmon, skin-side down, to the hot oil and cook for 5 minutes.

Step 4 –Flip the salmon and cook until it reaches an internal temperature of 145 degrees F and is flaky, about 2-4 minutes.

Step 5 –Transfer the cooked salmon to a plate to rest until it is cool enough to touch.

Step 6 –Use a fork to flake the cooled salmon into smaller pieces.

Step 7 –In a large serving plate or bowl, spread out the lettuce, the cucumbers, the tomatoes, the artichoke hearts, and the olives. Top with the flaked salmon and the feta cheese.

Step 8 –In a small bowl, whisk the remaining olive oil, the remaining salt, the remaining pepper, and the lemon juice together.

Step 9 –Serve the salad drizzled with the dressing.
