Ingredients
- 1 pound lean ground beef
- 1 shallot, diced
- salt, to taste
- pepper, to taste
- 2 tablespoons salted butter
- 1 pound oven-ready potato and onion mix, store-bought, cooked and diced, can substitute leftover cooked potatoes and onions
- 2-3 eggs, optional
Directions
Step 1 –In a large skillet over medium-high heat, add the beef and the shallot and cook, while crumbling the beef, until browned, about 5-7 minutes.
Step 2 –Season the beef mixture with the salt and the pepper.
Step 3 –Drain any excess grease from the skillet.
Step 4 –Transfer the beef mixture to a plate or bowl.
Step 5 –Add the butter to the pan to melt.
Step 6 –Return the cooked beef mixture to the pan.
Step 7 –Add the potato and onion mix to the pan and heat it through, seasoning with the salt and the pepper if needed.
Step 8 –Using the back of a spatula, press down on the hash mixture.
Step 9 –Allow the hash to cook until crisp on the bottom, about 3 minutes.
Step 10 –Flip the hash and cook until crisp on the other side, about 2-3 minutes.
Step 11 –Crack the eggs over the top of the hash and cover.
Step 12 –Allow the eggs to cook until they reach your desired level of runniness, about 3-5 minutes.
Step 13 –Serve.
