Ingredients

  • 1 1/2 cups hot water
  • 2 (0.25-ounce) envelopes unflavored gelatin
  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 (30-ounce) can mango pulp
  • 1 (14-ounce) can condensed milk
  • 1 teaspoon kosher salt
  • fresh mango, to taste, diced
  • crystallized ginger, to taste

Directions

Step 1 –Whisk the hot water and the gelatin together in a medium bowl until the gelatin dissolves.

Step 2 –Let the gelatin mixture cool slightly, about 10 minutes.

Step 3 –In the bowl of a stand mixer fitted with the whisk attachment, add the heavy cream and the powdered sugar and beat on high speed until stiff peaks form, about 1 minute 30 seconds.

Step 4 –Spoon the whipped cream into a large bowl.

Step 5 –Add the mango pulp, the condensed milk, the salt, and the cooled gelatin mixture to the mixer bowl and whisk until well-combined.

Step 6 –Gradually fold 1/3 of the mango mixture into the whipped cream until almost combined.

Step 7 –Gradually fold the remaining mango mixture into the whipped cream mixture.

Step 8 –Gently transfer the mango fluff to a large glass bowl.

Step 9 –Cover and chill the mango fluff in the refrigerator until firm, about 8 hours.

Step 10 –Serve the mango fluff topped with the fresh mango and the crystallized ginger.
