Ingredients
- 4 chicken breasts, boneless and skinless
- salt, to taste
- pepper, to taste
- 3 tablespoons flour
- 2 tablespoons olive oil, divided
- 1 (10-ounce) package sliced cremini mushrooms
- 1 large shallot, finely chopped
- 1 clove garlic, finely chopped
- 1/2 cup low-sodium chicken broth
- 1/2 cup Marsala wine
- parsley, optional, to taste, chopped, for garnish
Directions
Step 1 –Pound the chicken breasts to about a 1/2-inch thickness.
Step 2 –Season the chicken breasts with the salt and the pepper.
Step 3 –Lightly coat the chicken breasts with the flour.
Step 4 –In a large skillet over medium heat, add 1 tablespoon of the oil.
Step 5 –Add the chicken breasts to the hot oil and cook until they reach an internal temperature of 165 degrees F and are golden-brown, about 4-5 minutes per side.
Step 6 –Transfer the chicken breasts to a plate.
Step 7 –In the same skillet over medium-high heat, add the remaining oil.
Step 8 –Add the mushrooms to the hot oil and cook, while tossing occasionally, until they are golden-brown, about 5 minutes.
Step 9 –Add the shallots, the garlic, the salt, and the pepper and cook until fragrant and translucent, about 2 minutes.
Step 10 –Add the chicken broth, the Marsala wine, and the chicken breasts with any accumulated juices to the skillet and simmer until the liquid is reduced by half, about 4 minutes.
Step 11 –Serve garnished with the parsley.
