We know casseroles come in layers, but this one really takes the cake! This is mac and cheese layered atop a meatloaf… yes, really! The meatloaf is as tender and beefy as you’d hope for, and even comes with the classic sweet and tangy glaze! Except now on top is a layer of ooey-gooey, extra melty mac and cheese! Meatloaf Mac Casserole is literally comfort food on top of comfort food, and the result will soothe even the worst days into distant memories. What matters now is the present… like having another serving of Meatloaf Mac Casserole!
Ingredients
- 1 cup ketchup, divided
- 1 cup barbeque sauce
- 2 pounds lean ground beef
- 30 buttery crackers, crumbled
- 1 (2-ounce) packet onion soup mix
- 2 eggs
- 3 cups macaroni noodles
- 2 cups milk
- 1 (10.5-ounce) can condensed cheddar cheese soup
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 4 cups mozzarella and cheddar cheese blend, divided
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Grease a 9×13-inch baking dish.
Step 3 –In a medium mixing bowl, add the ketchup and the barbeque sauce and stir until combined.
Step 4 –In a large bowl, add the beef, the cracker crumbs, the onion soup mix, and the eggs and use your hands to combine.
Step 5 –Pour the beef mixture into the prepared baking dish and press it out evenly.
Step 6 –Spread the ketchup mixture on top of the meat mixture.
Step 7 –Bake the meatloaf for 30 minutes.
Step 8 –While the meatloaf is baking, cook the macaroni noodles to al dente according to the package directions. Drain.
Step 9 –In a large mixing bowl, add the milk and the cheddar soup and whisk until no lumps remain.
Step 10 –Add the salt, the pepper, the garlic powder, and the onion powder into the milk mixture and whisk well.
Step 11 –Add the cooked macaroni to the milk mixture and stir until all the noodles are coated in the liquid.
Step 12 –Add 2 cups of the cheese to the milk mixture and stir well.
Step 13 –Pour the macaroni mixture on top of the beef mixture and spread it out evenly.
Step 14 –Sprinkle the remaining cheese over the macaroni mixture.
Step 15 –Bake until the cheese on top is completely melted and just starting to brown, about 17-20 minutes.
Step 16 –Let the casserole sit for 5-10 minutes.
Step 17 –Serve.
