Meltaways

These cookies are magical. They may not make you fly (although you’ll be light on your feet after eating them) but you can taste the enchantment from the start. Meltaways literally melt in your mouth, as the rich, buttery, ethereally-sweet cookie casts a spell on your tastebuds. Each bite also has the tropical sunniness and pleasing sharpness of lime flavor and a dusting of powdered sugar. Mmmm, before you know it, you’ll be melting over Meltaways yourself.

Ingredients

  • 3/4 cup unsalted butter, at room temperature
  • 1 cup icing sugar/powdered sugar, divided
  • zest of 2 limes
  • 2 tablespoons lime juice
  • 1 tablespoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 2 tablespoons cornstarch

Directions

Step 1 –In a stand mixer, cream the butter and 1/3 cup of the icing sugar until fluffy.

Step 2 –Add the lime zest, the lime juice, and the vanilla and beat until fluffy.

Step 3 –In a bowl, whisk together the flour, the salt, and the cornstarch.

Step 4 –Add the flour mixture to the butter mixture and beat on low speed until combined.

Step 5 –Roll the dough into two (2-inch diameter) logs.

Step 6 –Cover the dough logs with wrap and chill in the fridge for at least 1 hour.

Step 7 –Preheat the oven to 350 degrees F.

Step 8 –Slice the dough into 1/8-inch-thick rounds.

Step 9 –Place the cookies on baking sheets, about 1-inch apart.

Step 10 –Bake the cookies until golden, about 15 minutes.

Step 11 –Allow the cookies to cool on a wire rack.

Step 12 –While still warm, toss the cookies with the remaining icing sugar.
