Ingredients
- 1/4 cup salsa
- 1/4 cup fresh lime juice
- 1/4 cup cilantro, chopped
- 2 tablespoons taco seasoning
- 2 tablespoons vegetable oil
- 2 pounds chicken breast, boneless and skinless
- olive oil, to taste, for oiling the grill grates
Directions
Step 1 –In a small bowl, whisk the salsa, the lime juice, the cilantro, the taco seasoning, and the vegetable oil together.
Step 2 –Poke the chicken breasts all over with a fork.
Step 3 –Place the chicken breasts in a resealable plastic bag and pour the salsa marinade over top.
Step 4 –Seal the bag and refrigerate the chicken breasts for at least 30 minutes and up to 4 hours.
Step 5 –Preheat the grill to medium heat. Brush the grates with the olive oil.
Step 6 –Place the chicken breasts on the grill and cook until they reach an internal temperature of 165 degrees F, about 4-6 minutes per side.
Step 7 –Transfer the chicken breasts to a plate to rest for 5 minutes.
Step 8 –Serve warm.
