Ingredients

  • 1 large egg, lightly beaten
  • 3/4 cup diced tomatoes, canned, drained
  • 1/2 cup tortilla chips, crushed
  • 1/4 cup cheddar cheese, shredded
  • 1/4 cup salsa
  • 2 tablespoons taco seasoning
  • 2 tablespoons onion, diced
  • 2 tablespoons ripe avocado, diced
  • 1/8 teaspoon pepper
  • 1/2 pound lean ground beef

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –In a bowl, combine the egg, tomatoes, tortilla chips, cheddar, salsa, taco seasoning, onion, avocado, and pepper.

Step 3 –Crumble the beef over the mixture and stir until well combined.

Step 4 –Shape the mixture into two loaves.

Step 5 –Place the loaves onto an ungreased 8-inch baking dish.

Step 6 –Bake until the meat is no longer pink and a thermometer inserted into the thickest part reads 160 degrees F, about 30-40 minutes.
