Directions

Step 1 –Line a baking tray with parchment paper.

Step 2 –Place 3/4 cup of the peanut butter, 2 tablespoons of the honey, and the vanilla in a microwave-safe bowl.

Step 3 –Microwave the mixture for 20 seconds.

Step 4 –Stir the peanut butter mixture until well-combined.

Step 5 –Taste the peanut butter mixture, adding the extra honey, to taste, for more sweetness.

Step 6 –Add the chia seeds, 3/4 cup of the oats, and the optional mix-ins into the peanut butter mixture and stir well until well-incorporated.

Step 7 –Taste the mixture for flavoring, adding more of the oats if the mixture is too runny and more of the honey or the peanut butter if it is too dry.

Step 8 –Roll the mixture into eight balls.

Step 9 –Place the balls on the prepared baking sheet and slightly press them flat.

Step 10 –Place the cookies in the fridge or the freezer to chill until set, at least 1 hour and up to overnight.

Step 11 –Allow the cookies to thaw for a few minutes before serving.

Step 12 –Serve.
