Ingredients

  • 1 large egg
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 3 teaspoons vanilla extract
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 1/4 cup mini chocolate chips

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Spray a miniature muffin tin with cooking spray.

Step 3 –Pour the egg and milk into a large mixing bowl and stir until the egg is beaten.

Step 4 –Add the oil and the vanilla extract to the bowl and stir again.

Step 5 –Add the granulated sugar and the brown sugar to the bowl and stir well.

Step 6 –Add the all-purpose flour, the baking powder, and the salt to the bowl and stir until no large lumps remain.

Step 7 –Add 1 cup of the chocolate chips to the bowl and stir to incorporate.

Step 8 –Spoon the batter into the prepared muffin tins, filling each cup about 2/3 of the way full.

Step 9 –Sprinkle the remaining mini chocolate chips on top of the muffin batter in each tin.

Step 10 –Bake until a toothpick inserted into the center of the muffins comes out clean, about 10-12 minutes.

Step 11 –Allow the muffins to cool in the pan for 5 minutes.

Step 12 –Transfer the muffins to a wire rack to cool completely.

Step 13 –Serve.
