Whether you’re hosting a garden party or having people over to watch your favorite sports team, Mini Hot Brown Sandwiches are a welcome sight! These delicious open-faced sandwiches stack the flavors high with thin slices of deli meat, melty cheese, and broiled, sweet tomatoes. Of course, it’s the deliciously thick and creamy cheese sauce that is the true star of Mini Hot Brown Sandwiches; be careful, as you may be tempted to eat it with a spoon. These snacks are a breeze to make and tend to vanish just as fast!


  • 1/2 cup butter
  • 1/3 cup flour
  • 3 1/2 cups milk
  • 1/3 cup parmesan cheese, grated
  • salt, to taste
  • black pepper, to taste
  • 8 slices bread, of your choice, toasted
  • deli turkey, to taste, sliced or torn into chunks, can substitute ham
  • cheddar cheese, to taste, shredded
  • bacon strips, to taste, slightly under-cooked
  • cherry tomatoes, to taste, sliced thin


Step 1 –Preheat the broiler.

Step 2 –In a skillet or frying pan over medium heat, melt the butter.

Step 3 –Add the flour to the melted butter and stir until well-incorporated.

Step 4 –Cook the flour until golden and the raw flour smell disappears, about 1 minute.

Step 5 –Add the milk, while whisking quickly, until very smooth and no lumps remain.

Step 6 –Add the parmesan, the salt, and the pepper to the sauce mixture and cook, while stirring constantly, until it begins to boil.

Step 7 –On an oven-safe plate or an oven pan, place the bread slices.

Step 8 –Top the bread slices with the turkey slices.

Step 9 –Drizzle the turkey slices evenly with the sauce.

Step 10 –Top each of the turkey-sauce layers with the cheddar, the bacon, and the cherry tomatoes, in that order.

Step 11 –Broil the open-faced sandwiches until the cheese is bubbly and the bacon is crispy, about 2-4 minutes.

Step 12 –Serve.
