Mini Pancake Cereal

For a fun take on breakfast, make Mini Pancake Cereal, a dish that first gained popularity on the video app TikTok. It’s exactly what it sounds like — tiny pancakes that you can douse in milk and eat with a spoon or eat with maple syrup and a fork. Use a pastry bag or squirt bottle to get the precise shape and size for extra cuteness. Mini Pancake Cereal is a spoonful of delight that will put some pizazz in your morning.

Ingredients

For the mini pancakes:

  • 2 tablespoons granulated sugar
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 3/4 cup milk, plus more, to taste
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons butter, melted and cooled slightly, plus more, to taste

Optional, for serving:

  • maple syrup, to taste
  • assorted fruit, to taste
  • honey, to taste

Directions

Step 1 –Combine the sugar, the flour, the salt, and the baking powder in a large bowl.

Step 2 –Make a well in the center of the dry ingredients and add 3/4 cup of the milk, the egg, the vanilla, and 2 tablespoons of the butter.

Step 3 –Whisk the wet ingredients together before slowly folding them into the dry ingredients. Mix until just combined; it should still have tiny lumps for maximum fluffiness.

Step 4 –Add 1-2 additional tablespoons of the extra milk as needed to slightly thin out the batter.

Step 5 –Allow your pancake batter to sit for 5 minutes while heating a griddle or nonstick pan over medium-high heat. Lightly grease the griddle or pan with the extra butter.

Step 6 –Pour the pancake batter into a squeezable sauce or condiment bottle. If using a gallon-size plastic bag, cut a small hole in the bottom corner at an angle.

Step 7 –Squeeze small dots of the batter onto the hot and greased pan.

Step 8 –Cook until the tops of the pancakes form bubbles and look dry and set.

Step 9 –Flip the mini pancakes over with a spatula and cook for 1-2 minutes until the undersides are golden.

Step 10 –Repeat that process with the remaining batter, lightly greasing the pan with more of the extra butter between each batch.

Step 11 –Serve with the maple syrup, the assorted fruit, and the honey!
