- 1 cup sweet onions, chopped
- 3 tablespoons light brown sugar
- 1 tablespoon water
- 1 teaspoon smoked paprika
- 1/2 teaspoon Worcestershire sauce
Optional, for serving:
- fresh thyme sprigs, to taste
- chips, to taste, of your choice
- bread, to taste, of your choice
Directions
Step 1 -In a 10-inch skillet over medium heat, add the bacon and cook, while stirring occasionally, until the fat renders and the bacon starts to crisp on the edges, about 9 minutes.
Step 2 -Transfer the skillet from the heat.
Step 3 -Using a slotted spoon, transfer the bacon to a paper-towel-lined plate.
Step 4 -Pour the drippings into a heatproof measuring cup.
Step 5 -In the skillet used to cook the bacon, add 2 tablespoons of the bacon drippings and the onions and cook, while stirring often, until the onions are a rich golden color, about 8 minutes. Reserve the remaining bacon drippings for another use or discard.
Step 6 -Add the cooked bacon, the brown sugar, the water, the smoked paprika, and the Worcestershire sauce to the onions and cook, while stirring constantly, until the mixture is syrupy and combined, about 15-30 seconds.
Step 7 -Transfer the skillet from the heat.
Step 8 -Transfer the bacon-onion mixture to a heatproof bowl.
Step 9 -Allow the dip to cool slightly, about 5 minutes.
Step 10 -Garnish the dip with the thyme sprigs.
Step 11 -Serve with the chips and the bread.
