Ingredients

  • 8 cups watermelon, cubed into 1-inch pieces
  • 4 cups strawberries, hulled and quartered
  • 3 cups blueberries
  • 18 large mint leaves, chopped
  • 1/2 cup fresh lime juice
  • 4 tablespoons powdered sugar
  • 4 tablespoons white rum, optional
  • jícama, optional, to taste, cut into 1/4-inch slices and shaped into stars

Directions

Step 1 –In a large bowl, add the watermelon, the strawberries, and the blueberries.

Step 2 –In a small bowl, combine the mint, the lime juice, and the powdered sugar.

Step 3 –Using the back of a spoon, muddle the mint.

Step 4 –Stir in the rum.

Step 5 –Drizzle the lime dressing over the fruit, gently folding to combine.

Step 6 –Chill the salad for at least 2 hours.

Step 7 –Fold the fruit again and add the jícama.

Step 8 –Serve.
