Ingredients
- 1 pound ground Italian sausage
- 1/2 small onion, diced
- 3 ounces frozen spinach
- 1 (28-ounce) can diced tomatoes
- 1 (8-ounce) package cream cheese, cubed
- 1 teaspoon Italian seasoning
- 1 (16-ounce) package frozen tortellini
- 3 cups chicken broth
- 1/4 cup tomato paste
- 1/4 cup parmesan cheese, optional, grated, for topping
Directions
Step 1 –In a large skillet over medium-high heat, add the sausage and the onion and cook, while crumbling the meat, until the sausage is no longer pink, about 5-7 minutes.
Step 2 –Drain the fat from the skillet.
Step 3 –In a 6-quart slow cooker, add the sausage-onion mixture, the spinach, the tomatoes and their juices, the cream cheese, the Italian seasoning, the tortellini, the chicken broth, and the tomato paste and stir to combine.
Step 4 –Cover and cook on low until the tortellini is tender and the flavors have melded together, about 2 hours 30 minutes-3 hours 30 minutes.
Step 5 –Stir until the sauce is smooth.
Step 6 –Serve topped with the parmesan.
