All she has to do is make Momma’s Tortellini Pasta Salad and the gratitude from her friends and guests just starts rolling in! Tender, cheese-filled tortellini in a dressing that’s equal parts sweet, tangy, bright, and smooth, with plenty of creamy mozzarella cheese, savory salami, and spicy peppers to really keep things exciting! Momma’s Tortellini Pasta Salad will make all other pasta salads seem not quite as dynamic in comparison.
Ingredients
- 1 (20-ounce) package refrigerated or frozen cheese tortellini
- 2/3 cup plus 2 tablespoons olive oil, divided
- 1/3 cup white wine vinegar
- 1/4 cup sun-dried tomatoes in oil, finely chopped
- 1/4 cup parmesan cheese, finely grated, plus more, to taste, for topping
- 1 tablespoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 cups cherry tomatoes, halved
- 8 ounces fresh mozzarella, cut into 1/2-inch pieces
- 1 cup salami, sliced
- 1 cup black olives, sliced
- 1 cup zucchini, thinly sliced
- 1 cup yellow or green bell pepper, thinly sliced
- 1/2 cup pepperoncini pepper, sliced
- 1/4 medium red onion, thinly sliced
- 1/2 cup fresh basil, chopped
Directions
Step 1 –Cook the tortellini to al dente, according to the package directions.
Step 2 –Drain the tortellini and rinse it with cold water.
Step 3 –Return the tortellini to the pot and toss it with 2 tablespoons of the oil.
Step 4 –In a large bowl, whisk together the remaining olive oil, the vinegar, the sun-dried tomatoes, 1/4 cup of the parmesan, the honey, the salt, and the pepper until combined.
Step 5 –Add the cooked tortellini, the cherry tomatoes, the mozzarella, the salami, the olives, the zucchini, the bell pepper, the pepperoncini, and the onion to the dressing and toss to combine.
Step 6 –Cover and refrigerate for at least 1 hour and up to 3 days.
Step 7 –Just before serving, add the basil and stir gently to combine.
Step 8 –Top with the extra parmesan and serve.
