Refreshing arugula, bright and bursting grape tomatoes, and creamy goat cheese mingle with tender orzo and juicy grilled chicken for a hearty yet light meal. Mom’s Chicken Orzo Salad is anything but boring, so make sure you make enough for everyone!
Ingredients
- 1 1/4 cups orzo
- 3 cups chicken breast strips, grilled and chopped
- 1 1/2 cups arugula, trimmed
- 1 cup grape tomatoes, halved
- 1/2 cup red bell pepper, chopped
- 1/4 cup red onion, chopped
- 2 tablespoons basil, chopped
- 1 teaspoon oregano, chopped
- 2 tablespoons red wine vinegar
- 1 tablespoon extra-virgin olive oil
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 6 tablespoons goat cheese, crumbled, for topping
Directions
Step 1 –Cook the orzo pasta according to package directions. Drain well.
Step 2 –Combine the cooked pasta, the chicken, the arugula, the grape tomatoes, the red bell pepper, the red onion, the basil, and the oregano in a large bowl, tossing well.
Step 3 –Combine the vinegar, the oil, the salt, and the black pepper in a small bowl, stirring with a whisk.
Step 4 –Drizzle the vinegar mixture over the pasta mixture, tossing well to coat.
Step 5 –Sprinkle the pasta with the cheese.
Step 6 –Serve.
