Warm, homemade chocolate brownies are the perfect base for any party animal. The creamy, dreamy, banana pudding layer topped with more bananas and crunchy vanilla wafer crumbs will make you go, well, bananas. What’s that phrase, “monkey see, monkey do?” Yeah, that’s pretty much how eating Monkey Business Brownies goes. It won’t be long until everyone is in on the delicious fun!
Ingredients
For the brownie layer:
- 1 cup light brown sugar
- 1/4 cup granulated sugar
- 1/2 cup salted butter, melted
- 2 teaspoons vanilla extract
- 2 large eggs
- 1 cup all-purpose flour
- 1/4 cup cocoa powder
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
For the pudding layer:
- 1 (3.4-ounce) packet vanilla instant pudding mix
- 1 cup milk
- 1 banana, chopped
- 1 cup imitation whipped cream
For the topping:
- 1 banana, sliced
- 10 vanilla wafer cookies, crushed
Directions
Step 1 –Preheat the oven to 375 degrees F.
Step 2 –Line a 9×13-inch baking dish with aluminum foil, ensuring there is some overhang over the edges. Spray the foil with cooking spray.
Step 3 –In a large bowl, add the brown sugar, the granulated sugar, and the melted butter and stir until combined.
Step 4 –Add the vanilla extract and the eggs to the sugar mixture and stir well.
Step 5 –Add the flour, the cocoa powder, and the salt to the sugar mixture and stir until thoroughly combined.
Step 6 –Fold the chocolate chips into the brownie batter.
Step 7 –Evenly spread the brownie batter into the prepared baking dish.
Step 8 –Bake the brownies until a toothpick inserted in the center comes out almost clean with just a few crumbs clinging to it, about 18-20 minutes.
Step 9 –Allow the brownies to cool.
Step 10 –While the brownies are cooling, in a large bowl, add the instant pudding mix and the milk and use an electric mixer to beat it until a very thick mixture forms.
Step 11 –Add the 1 chopped banana into the pudding mixture and continue beating until no large chunks of the banana remain.
Step 12 –Add the imitation whipped cream to the pudding mixture and use a rubber spatula to fold it into the pudding mixture.
Step 13 –Pour the pudding mixture on top of the slightly cooled brownies and spread it over them evenly.
Step 14 –Place the remaining sliced banana on top of the pudding mixture and sprinkle it with the crushed wafer cookies.
Step 15 –Allow the pudding-coated brownies to chill in the fridge for at least 3 hours and up to overnight.
Step 16 –Use the foil overhang to lift the brownies from the pan.
Step 17 –Slice and serve.
