There’s even some earthy spinach swirled in with those bouncy noodles and a bit of savory crispy fried onions on top for that perfect crunch. It’s quite the dish! Ingredients
- 1 large egg
- 1 cup sour cream
- 1/4 cup parmesan cheese, grated
- 1/4 teaspoon garlic powder
- 4 ounces spaghetti, broken into 2-inch pieces, cooked
- 2 cups Monterey Jack cheese, shredded
- 1 (10-ounce) package frozen chopped spinach, thawed and drained
- 1 (2.8-ounce) can crispy fried onions, divided
- salt, to taste
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Grease a 2-quart baking dish.
Step 3 –In a large bowl, add the egg and use a whisk to lightly beat.
Step 4 –Add the sour cream, the parmesan cheese, and the garlic powder to the egg and stir to combine.
Step 5 –Add the cooked spaghetti, the Monterey Jack cheese, the spinach, 1/2 of the crispy fried onions, and the salt to the sour cream mixture and stir to combine.
Step 6 –Pour the spaghetti mixture into the prepared baking dish.
Step 7 –Cover the baking dish and bake the casserole until it is heated through, about 30 minutes.
Step 8 –Top the casserole with the remaining crispy fried onions and bake again until the onions are golden-brown, about 5 minutes.
Step 9 –Serve.
